Hi El,
I generally use little to no dither when converting from 24 to 16 bit on the types of records I work on. I’ve found more often than not, that it can change the sound in an unintended and sometimes unpleasant way, so I evaluate it on a case by case basis and generally use it sparingly when advantageous or go without it altogether. When I do use it, I try different types and A/B it to the 24-bit un-dithered version and select the type where they sound the most similar. Hope this helps.
